Today we are having another storm. I believe it has been two years that we did not have a monsoon to speak of. Besides that, I still have the carne seca in the dryer. It is kinda raining right now and the app says it is 51% humidity. The general rule is to use the old school dehydrator at less than 50% humidity but since it is finished I would say, I’m not worried about it. If it was going to anyone but me I would be more meticulous with such rules but I trust myself to know when it is bad. When it stops raining I’ll retrieve it. Mmm so tasty!
Yes I am keeping notes on my carne seca here as it is piece of the production sector of Zap Gardens. I developed the recipe over the last year or so but I kept loosing my copy so I keep trying to recreate it as good as possible. This one has too much paprika. I want all the flavors to take a back seat together and none to stand out strongly. Still delicious.
